Since I am a passionate cook and foodie, I was delighted to partner with Pyrex®, a World Kitchen Brand and write this post to help this iconic brand celebrate their 100th Anniversary.

Since 1915, Pyrex glassware has been an American made kitchen staple, helping countless families bring comfort and joy through cooking. As the Pyrex brand commemorates its biggest and boldest anniversary to date, I am happily raising my measuring glass and toasting this brand that has always been a staple in my kitchen and will continue to be for many more years to come!

In celebration of their 100th anniversary, Pyrex has released retro FAB Limited-Edition pieces to honor their legacy. In an ode to their popular “New Dots” collection of the 1960s, this new 2015 kitchenware will feature the familiar Pyrex dot motif in a variety of attractive colors. I LOVE the turquoise and chartreuse green pieces because those are two of my favorite colors and they add a vibrant touch to my kitchen accessories. How could I possibly write a post about Pyrex and not share a fabulous recipe? Exactly! So I thought that the perfect way to celebrate Pyrex’s 100th Anniversary would be to make my frequently requested, deelish and super easy-to-make Sunday Brunch Coffee Cake (BTW It pairs nicely with champagne too, Cheers Pyrex!) This cake is my go-to staple anytime I host or attend brunch at somebody elses house because it has a yummy comforting taste everyone loves (kids especially!), it tastes divine right out of the oven and is the perfect compliment to your typical brunch fare like eggs, bagels and fruit. Enjoy!

Sunday Brunch Coffee Cake

Ingredients:

Pyrex Ingredients

1 Package of Yellow Cake Mix

1 Small Package of Instant Pudding (Butterscotch or Vanilla)

4 Eggs

3/4 Cup Water

3/4 Cup Vegetable Oil

1 Teaspoon Vanilla

1 Cup of Chocolate Chips, Your Favorite Nuts or Both

1/3 Cup Sugar

1 Tablespoon of Cinnamon

Optional Glaze: 1 Cup of Powdered Sugar & 3 Tablespoons of Milk

Mix together cake mix, pudding, eggs, water, oil & vanilla. I love using my old fashioned electronic hand mixer

The batter will be pretty thick

Grease a 9 x 13 Pan – I LOVE the Pyrex 100Portables 100th Anniversary Value Pack which comes with a 9×13 glass baking dish & a fab insulated carrier

Pyrex Portable

Sprinkle a 1/2 cup of chocolate chips and/or your favorite nuts or both on the bottom of the pan and cover it with 1/2 of the batter

Pyrex Spread in Pan

Mix a 1/3 Cup of Sugar with a Tablespoon of Cinnamon and sprinkle half of that mixture over the batter in the pan

Pyrex Sprinkle

Cover that layer with the remaining batter, then another half cup of chocolate chips/nuts and then sprinkle with the rest of the cinnamon and sugar mixture. Bake at 350 degrees for 35 minutes or until it’s done

Pyrex Stovetop

Let it cool slightly and then put it in your fabulous Pyrex Portable Carrier 🙂

Oops! I almost forgot to take a bite 😉 Nom, Nom! Perfect for brunch at home or to take on the go. If you want to kick it up a notch, make a little glaze with 1 Cup of Powdered Sugar and 3 Tablespoons of milk drizzled over the warm cake, deelish!
